Networking setup in theater.

Hello, my sister in law works for a smallish theater in the midwest and they are looking to upgrade their network with the hopes of fixing their current problems(currently running a bunch of different airport extremes), but also being able to support up to 700 guests at events/renting the space out for conferences etc.. They received a quote from a local vendor and she wanted to have me take a look, but I'm more of a sysadmin guy and not as much network. Of course the proposal is 3x as much as they have budget for at the moment and so I was wondering if there were places that you think could reasonably save on. The hardware they listed is below. Do you think this is appropriate for this sort of environment or could they reasonably get away with something less expensive?

5x Ruckus R310, 2x Ruckus R710; Fortigate 100E; HPE 2620 48 Port PoE+ Switch
