Switch recommendation

We are building a new thing, getting into somewhat new network territory for us.

There will be around half a dozen workplaces, each with a handfull of computers. Bandwidth usage is quite high, as live video streams will be moved around.

We thought about having classic switches (1GbE Ports) with 10GbE uplinks to a central switch.

At the central rack, there will be another 10 servers or so that do some encoding and stuff. Therefore we need a powerful central switch with at least 24 10GbE ports.

Would you guys recommend running 10G copper or glass?

What product lines would fit that requirement? We are mostly using UniFi (simpler things) and HPE switches until now.
