Need help meshing Windows Server 2008 [DHCP Server], Cisco 3850 [Core Switch], and Ubiquiti APs using VLANs

Hello networking-land!

I need some help/insight on how to accomplish what I am about to write.
I was fortunate enough to gain this position when my supervisor suddenly had to leave.

We have a Dell Server [Win Server 2008r2] running a DHCP server, we have a stacked 3850 as our core switch, Ubiquiti APs, and a SonicWall.

Before I got involved, most of our stuff was on a flat network. But the company wants to start providing guest Wi-Fi as well.
It was finally decided that VLANs would be a good idea, especially for the public side.
I was perfectly fine with the Switching aspect of Cisco, but not so much the Routing side.

Currently, we added an additional scope to the DHCP server, added all the VLANs and their IP/SM to the Cisco, and added the appropriate VLAN ID to the SSID on the Ubiquiti AP.
Currently, if I use a static IP on my phone, I can get network/Internet. But DHCP does not travel through.
I know I'm missing something, but I lack the knowledge/experience to find what I'm missing.

Any pointers would be great, and if anything else is needed [like running-config], please DM me.
