Soft rollover DHCP from win server 2012 to 2016?

Hey guys so we have an old server running DHCP currently that I recently discovered hasn't been updated since 2017(!!!!!!). I was able to internally source two gently used poweredge R320s. The old server runs windows server 2012 R2 while one of the new ones is already configured with windows server 2016 datacenter. I was wondering if there is an easy way to soft rollover the old server to the new one before introduced the second new as a load balanced setup.

I was thinking if it's possible to load balance the 2012 and 2016 server. Then slowly increase how much of each scope is on the new server until the old one isn't being used anymore. Then once everything is updated and running 100% on the new one I can then just decommission the old one. Trying to minimize interruptions as there alot of other changes I'm planning to implement.
