Topology Question - Dedicated switch or redundancy?

Good morning all,

I recently started at a small shop where everything is flat. I'm trying to get away from this for obvious reasons, but now I'm torn with how I'd like to proceed.

There are (2) separate rooms -- server room and switching closet. Each has 2x Lenovo switches. Between all 4 switches, is a loop (running mstp -- switches C and D have the lowest priority). A goes to B, B goes to C, C goes to D, D goes to A.

The issue here is switches C and D (server room) -- they play host to the SAN and network traffic. I don't like this.

Option #A:

I create a dedicated iSCSI VLAN between switches C and D, trunk that VLAN amongst them both

OR

Option #B:

Lose redundancy and have switch C for networking and switch D for iSCSI.

Option #C:

Something else you all think of that I have not

Note: Ma and pa shop here, and they have already indicated they will not purchase another switch
