Simple Question re Ethernet Cabling

Hi All, thanks for looking. I am currently in the process of an office move, and at the moment our new office has partitioning done, and our electrician is just in the process of wiring up our ethernet and electrical wiring. The problem is, my boss would like all rooms to have ethernet sockets on BOTH sides of the room, however we only have one set (voice and data) of ethernets going to each room. BUT only one set will be active at once. Basicalyl its so that our clients can decide which side of the room their desk can go on. Our electrician thinks we can just piggy back (daisy chain) both of the ethernet cables up and over the ceiling and into the opposite side of the room. For some reason I cant really articulate why but I dont think this will work, but in practice should it work? TIA
