Customer VLAN mode?

I was just put in a position to change networking for a shared office space, so they use the same 10g connection coming into the building, but different IP's out of a /24 that was provided by the ISP based on the office they're in. The customers will be assigned a static IP out of a /24, but what I would like to know is if it makes sense to use the "Customer" vlan mode on the ports that each office is connected to, for security so they can't sniff or do anything illicit to other users. I've read that that's the point of it, but I've never used that customer vlan setting before.

Ideas, thoughts?
