In the past I've been using Adtran's ActivReach solution see:

it is limited to max of 100Mb (FastEthernet) claims 1200ft (I think) - actual installation I've gone as far as 1600ft - and testing on wire up to 2000ft works for 10Mb
no fiber, just regular cat5e/cat6 cabling required
you'll install a PoE switch (activreach goes out via port), cabling, a media converter (converts activreach to PoE), cabling, PoE device.
and this works quite well (largest installation involved 1000+ APs and phones)
(you can find APs that have a PoE port to extend network capabilities as well).

thoughts:
I think for just VoIP - the Adtran Activreach solution is much more economical
I think for WAP - for a limited number of users - Activreach is much cheaper
I think for WAP - large venues, lots of users - Berktek One Reach, will likely be much better
I think for cameras - if you have 4k resolution - One Reach will support your needs much better, if you're less than 4k than ActivReach will do just fine
If you do know how to terminate fiber, Berktek sells unterminated cabling for their solution - which is really nice, when the site survey failed to account for distances.
