Questions about Yagi antennas in a 4G LTE setup [UK]

Hi,

So i live very rural and as a result, have absolutely shite broadband (2.5mbps down, 0.8 up). I currently have a 4G plan with Virgin that gives me 100 gigs of data with rollover, which i can get a signal for if the phone is at my window. (about 30mbps download).

I did a signal scan with my phone, and apprently it can see the Three network, but when ive tested with a three sim card i was unable to connect. (They offer unlimited data).

Is it crazy to think if i can detect this signal with my phone, that pointing a Yagi antenna towards a cell tower would let me utilize a three data plan? I have been able to find the EE and Vodafone towers using a cell mast mapper online, but im unable to find any for three or o2. (A neighbour does use O2 for their phone network, so that makes me think the mapping data is just incomplete).

I'm also confused with whether i would require 2 Yagi antennas, or just one. I've found mixed results on YouTube, some just seem to use a single, other videos say you need 2 because of cross polarization of the antennas is needed for MIMO LTE. (I dont fully understand, but i guess horizontal + vertical = better). If i could just use 1, it seems like setup would be easier.

My plan is to buy a wireless router and a yagi antenna, and just point it roughly where i think the cell towers should be until i find a signal. Any advice, is this crazy or doable?
